Fall Pho Recipe

Fall Pho with Soy-Maple protein

Phở, or pho, is a Vietnamese soup consisting of broth, rice noodles, herbs, and protein. Pho is a popular food in Vietnam where it is served in households, street stalls and restaurants countrywide. Pho is considered Vietnam's national dish.

This pho recipe comes from Joe Sweeney who shared a delicious vegan pho with soy-maple tofu. Plus, he uses a crockpot to make an easier broth recipe if you don't have time to make the traditional broth (which requires a lot of straining). He uses a five quart crockpot for this, but you can halve things if you have a smaller crockpot.

 Prepare the Components:

Broth:
- Bone broth in crockpot2 32oz boxes of Beef or Vegetable broth 
-1 small onion or shallot (peeled and halved)
-1 medium apple (halved and stem removed)
-2 inch piece of garlic (peeled) or 1 teaspoon dry ground ginger (pick one)
-2 tablespoons anise seeds or 5 star anise pods
-cheese cloth (to house anise)
-1 tablespoon salt or 1 tablespoon soy sauce
-1 tablespoon pepper or sriacha 
-1 tablespoon Sterling Valley Maple Syrup or Bourbon Barrel Maple Syrup.
-3 stalks of celery cut into 3 inch pieces
-1/4 cup of sliced mushrooms (shitake, portabella, or white preferred)
Optional:
-1 seeded tomato
-1/4 cup baby carrots

Place anise into cheese cloth and tie off tightly (butcher twine preferred). Place all ingredients in a crockpot and cook on low for 4-6 hours. Remove all of the solids with a spoon or hand strainer.  

Protein:

Maple Soy Tofu:
-1 block of extra firm tofu
-16oz package of sliced mushrooms (shitake, portabella, or white preferred)
-1 and ½ cup soy sauce
-1/2 cup Sterling Valley Maple Syrup
Optional:
-1 tablespoon sriacha

Finished Tofu

Sirloin:
-Slice into paper thin slices with a very sharp knife.

Shaved Sirloin

Prepare 10 oz of ramen or rice noodles

Make the noodles as the package recommends but put them in a water bath to stop the cooking. This will allow them to not get soggy.  (Note: most of these soup noodles can be thin so a smaller strainer may be needed.)

Prepare garnishes
Prepared ingredents
  • lime 
  • fresh cilantro
  • spicy pepper sliced
  • onion or shallots
  • fresh basil
  • Hoisin sauce
  • sriacha
  • soy sauce
  • fish Sauce

Peel and halve onions, slice thins slices off the halves. 
Slice thin slices of the spicy pepper. 


Assembly:

In a large bowl, put some noodles in the bottom, then add your protein and bean sprouts.

Pour broth over the contents of the bowl until it there is a little room at the top. For raw sirloin, let bowl sit for 1-2 minutes to finish cooking the beef. The heat of the broth will cook the beef, or you may need to put the bowl in the microwave for 30 seconds to complete the cooking to taste. 

Top with the sauces, add herbs, and squeeze lime to taste. 

Eat with chopsticks and a spoon (or a fork and spoon). You can add more bean sprouts as you go.
